Spicy Dum Aloo Recipe – Authentic Indian Potato Curry with Rich Flavors!

Dum Aloo is a classic North Indian dish made with baby potatoes simmered in a rich, flavorful, and aromatic tomato-based gravy. This dish is perfect for spice lovers and pairs wonderfully with roti, naan, or rice. Follow this easy recipe to create a restaurant-style Dum Aloo at home!

Ingredients:

  • 10-12 baby potatoes
  • 2 large tomatoes (pureed)
  • 1 large onion (finely chopped)
  • 2-3 garlic cloves (minced)
  • 1-inch ginger (grated)
  • 1/2 cup yogurt
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon garam masala
  • 1 teaspoon coriander powder
  • 1/2 teaspoon fennel seeds
  • 1/2 teaspoon kasuri methi (dried fenugreek leaves)
  • 2 tablespoons oil
  • Salt to taste
  • Fresh coriander leaves (for garnish)
  • 1/2 cup water

Instructions:

  1. Prepare the Potatoes: Boil or steam the baby potatoes until they are tender but firm. Peel the skin and prick them with a fork.
  2. Fry the Potatoes: Heat 1 tablespoon oil in a pan and lightly fry the potatoes until golden brown. Remove and set aside.
  3. Prepare the Masala: In the same pan, add cumin seeds and let them splutter. Add chopped onions and sauté until golden brown. Add garlic, ginger, and cook until fragrant.
  4. Add Spices: Stir in turmeric, red chili powder, coriander powder, and fennel seeds. Cook for a minute.
  5. Cook the Tomato Base: Add pureed tomatoes and cook until the oil separates from the masala.
  6. Incorporate Yogurt: Lower the heat and add whisked yogurt gradually while stirring continuously.
  7. Simmer with Potatoes: Add the fried potatoes, mix well, and pour in water. Cover and simmer for 10-15 minutes.
  8. Final Touch: Sprinkle garam masala, kasuri methi, and mix well. Garnish with fresh coriander leaves.
  9. Serve Hot: Enjoy with steamed rice, jeera rice, naan, or roti.
